Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup diced tomatoes (canned, no sugar added)
  • 1/2 cup tomato sauce (no sugar added)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream
  • 1/4 cup cream cheese, softened
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)
  • Sliced jalapeños (optional, for garnish)

Instructions:

1. Preheat the Oven:

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.

2. Cook the Ground Beef:

4. Prepare the Cheese Mixture:

  1. In a medium bowl, combine the shredded cheddar cheese, shredded Monterey Jack cheese, sour cream, and softened cream cheese. Mix until well combined.

5. Assemble the Casserole:

  1. Spread the beef and vegetable mixture evenly in the prepared baking dish.
  2. Spoon the cheese mixture on top of the beef mixture, spreading it out evenly.

6. Bake the Casserole:

  1. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

7. Garnish and Serve:

  1. Remove the casserole from the oven and let it cool for a few minutes.
  2. Garnish with chopped fresh cilantro and sliced jalapeños, if desired.
  3. Serve warm.
