Keto chocolate nut clusters


 



Ingredients:

  • 1 cup mixed nuts (such as almonds, pecans, walnuts, and hazelnuts)
  • 1 cup sugar-free dark chocolate chips
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • Sea salt flakes (optional, for sprinkling on top)

Instructions:

1. Prepare the Nuts:

  1. Preheat your oven to 350°F (175°C).
  2. Spread the mixed nuts on a baking sheet in a single layer.
  3. Roast the nuts in the preheated oven for about 8-10 minutes, or until they are fragrant and lightly toasted. Be sure to watch them closely to avoid burning.
  4. Remove the nuts from the oven and let them cool.

2. Melt the Chocolate:

  1. In a microwave-safe bowl, combine the sugar-free dark chocolate chips and coconut oil.
  2. Microwave in 30-second intervals, stirring after each interval, until the chocolate is fully melted and smooth.
  3. Stir in the vanilla extract.

3. Combine the Nuts and Chocolate:

  1. Add the toasted nuts to the melted chocolate mixture, stirring until all the nuts are well coated with chocolate.

4. Form the Clusters:

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Drop spoonfuls of the chocolate nut mixture onto the prepared baking sheet, forming clusters.
  3. If desired, sprinkle a small pinch of sea salt flakes on top of each cluster.

5. Chill and Set:

  1. Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate has fully set.

6. Serve:

  • Once the chocolate is set, transfer the clusters to an airtight container and store them in the refrigerator.
