Keto Cauliflower Hash Browns


 

Ingredients:

  • 1 medium head of cauliflower (about 4 cups grated)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup almond flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons butter or olive oil for frying

Instructions:

1. Prepare the Cauliflower:

  1. Cut the cauliflower into florets and grate them using a box grater or a food processor with a grating attachment to make cauliflower rice.
  2. Place the grated cauliflower in a microwave-safe bowl and microwave for about 4-5 minutes, or until tender.
  3. Let the cauliflower cool slightly, then place it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.

2. Make the Hash Brown Mixture:

  1. In a large bowl, combine the drained cauliflower, shredded cheddar cheese, grated Parmesan cheese, egg, almond flour, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

3. Form the Hash Browns:

  1. Take a small handful of the mixture and shape it into a patty, about 3 inches in diameter. Repeat with the remaining mixture.

4. Cook the Hash Browns:

  1. Heat the butter or olive oil in a large skillet over medium heat.
  2. Place the cauliflower patties in the skillet, making sure not to overcrowd the pan. Cook in batches if necessary.
  3. Cook the hash browns for about 3-4 minutes on each side, or until golden brown and crispy.
  4. Transfer the cooked hash browns to a paper towel-lined plate to drain any excess oil.

5. Serve:

  • Serve the keto cauliflower hash browns hot, optionally with a side of sour cream, avocado, or your favorite low-carb dipping sauce.
