Cheesy Chicken Fritters

 


Ingredients:

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour (or coconut flour for a different texture)
  • 2 large eggs
  • 1/4 cup mayonnaise
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil (for frying)

Instructions:

1. Prepare the Chicken:

  1. Finely chop the chicken breasts into small pieces. You can also use a food processor to pulse the chicken until it's finely chopped but not a paste.

2. Mix the Ingredients:

  1. In a large bowl, combine the chopped chicken, shredded mozzarella cheese, grated Parmesan cheese, almond flour, eggs, mayonnaise, minced garlic, chopped parsley (if using), salt, black pepper, and paprika. Mix well until all ingredients are evenly distributed.

3. Form the Fritters:

  1. Using your hands or a spoon, form the mixture into small patties or fritters, about 2-3 inches in diameter.

4. Cook the Fritters:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Once the oil is hot, add the fritters to the skillet, being careful not to overcrowd the pan.
  3. Cook the fritters for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  4. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.

5. Serve:

  • Serve the cheesy chicken fritters hot, optionally garnished with additional fresh parsley. They can be enjoyed on their own or with a dipping sauce like ranch or aioli.
