Crock pot cheesy scalloped potatoes




Ingredients:

  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups heavy cream
  • 1 cup milk
  • 3 cloves garlic, minced
  • 2 tablespoons butter, cut into small pieces
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

1. Prepare the Ingredients:

  1. Peel and thinly slice the potatoes using a mandoline slicer or a sharp knife.
  2. Thinly slice the onion and mince the garlic.

2. Layer the Ingredients in the Crock Pot:

  1. Grease the inside of your Crock Pot with butter or non-stick cooking spray.
  2. Layer half of the sliced potatoes in the bottom of the Crock Pot.
  3. Top with half of the sliced onions and half of the minced garlic.
  4. Sprinkle half of the flour over the potatoes and onions.
  5. Season with salt and pepper to taste.
  6. Sprinkle half of the shredded cheddar and mozzarella cheese over the top.
  7. Repeat the layers with the remaining potatoes, onions, garlic, flour, salt, and pepper.

3. Prepare the Cream Mixture:

  1. In a medium saucepan, heat the heavy cream and milk over medium heat until warm but not boiling.
  2. Pour the warm cream mixture over the layered potatoes in the Crock Pot.
  3. Dot the top with butter pieces.

4. Cook the Potatoes:

  1. Cover the Crock Pot and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  2. About 30 minutes before serving, sprinkle the remaining cheese on top. Cover and continue to cook until the cheese is melted and bubbly.

5. Serve:

  1. Once cooked, turn off the Crock Pot and let the potatoes sit for about 10 minutes to allow the sauce to thicken.
  2. Garnish with freshly chopped parsley if desired.
  3. Serve hot.
