Keto Best Chicken Salad

Ingredients:

For the Chicken Salad:

  • 2 cups cooked chicken breast, diced or shredded
  • 1/2 cup mayonnaise (full-fat, preferably sugar-free)
  • 1/4 cup sour cream (optional for extra creaminess)
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped dill pickles or pickle relish (sugar-free)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon paprika (optional)
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley or dill (optional)
  • 1/4 cup chopped pecans or walnuts (optional for added crunch)

Instructions:

1. Prepare the Chicken:

  1. If you don't have pre-cooked chicken, you can poach, bake, or grill chicken breasts until fully cooked. Let cool and then dice or shred.

2. Mix the Dressing:

  1. In a large mixing bowl, combine the mayonnaise, sour cream (if using), Dijon mustard, lemon juice, garlic powder, onion powder, paprika (if using), salt, and pepper. Mix well until smooth and creamy.

3. Combine Ingredients:

  1. Add the diced or shredded chicken, chopped celery, red onion, dill pickles or pickle relish, and fresh herbs (if using) to the bowl with the dressing. Mix until all ingredients are well-coated with the dressing.
  2. If desired, fold in the chopped pecans or walnuts for extra texture and flavor.

4. Chill and Serve:

  1. Refrigerate the chicken salad for at least 30 minutes before serving to allow the flavors to meld together.
  2. Serve chilled on its own, in lettuce wraps, or over a bed of mixed greens for a complete meal.
