  • 1/4 cup chopped green onions (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

For the Keto Doritos Coating:

  • 1 1/2 cups pork rinds, crushed into fine crumbs
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)

For Frying:

  • 2 tablespoons avocado oil (or another high-heat oil)

Instructions:

1. Prepare the Stuffing:

  1. In a medium bowl, mix together the softened cream cheese, shredded cheddar cheese, crumbled bacon, green onions (if using), garlic powder, onion powder, salt, and pepper until well combined.

2. Prepare the Chicken:

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, create a pocket in each chicken breast by cutting a slit along the side without cutting all the way through.
  3. Stuff each chicken breast with an equal amount of the cream cheese mixture. Use toothpicks to secure the opening if needed.

3. Prepare the Keto Doritos Coating:

  1. In a shallow dish, combine the crushed pork rinds, paprika, chili powder, garlic powder, onion powder, and cayenne pepper (if using).

4. Coat the Chicken:

  1. Press each stuffed chicken breast into the pork rind mixture, ensuring it is well-coated on all sides.

5. Fry the Chicken:

  1. Heat the avocado oil in a large oven-safe skillet over medium-high heat.
  2. Add the coated chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown.

6. Bake the Chicken:

  1. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  2. Remove the toothpicks before serving.
