Chicken Bacon Ranch Roll-Ups

Instructions:

1. Prepare the Chicken:

  2. Butterfly the chicken breasts by slicing them horizontally, being careful not to cut all the way through, then open them like a book. Pound the chicken to an even thickness using a meat mallet.

2. Make the Filling:

3. Assemble the Roll-Ups:

  2. Roll up the chicken breasts tightly and secure them with toothpicks.

4. Cook the Chicken:

  1. Heat the olive oil or avocado oil in a large oven-safe skillet over medium-high heat.
  2. Sear the chicken roll-ups on all sides until they are golden brown, about 2-3 minutes per side.

5. Bake the Chicken:

  1. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

6. Serve:

  • Remove the toothpicks before serving. You can garnish with additional parsley or chives if desired.
