Keto Cherry Blueberry Clafoutis

Ingredients:

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup powdered erythritol (or your preferred keto sweetener)
  • 3 large eggs
  • 1 cup unsweetened almond milk (or heavy cream for a richer taste)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1 cup fresh or frozen blueberries
  • Butter or coconut oil for greasing the baking dish

Instructions:

1. Preheat the Oven:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or baking dish with butter or coconut oil.

2. Prepare the Batter:

  1. In a medium mixing bowl, whisk together the almond flour, coconut flour, powdered erythritol, and salt.
  2. In another bowl, whisk the eggs until well beaten. Add the unsweetened almond milk (or heavy cream), vanilla extract, and almond extract, and whisk until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, whisking continuously until you have a smooth batter.

3. Assemble the Clafoutis:

  1. Spread the cherries and blueberries evenly over the bottom of the greased baking dish.
  2. Pour the batter over the fruit, ensuring it is evenly distributed.

4. Bake:

  1. Bake in the preheated oven for 35-40 minutes, or until the clafoutis is set and lightly golden on top. A toothpick inserted into the center should come out clean.
  2. Allow the clafoutis to cool slightly before serving.

5. Serve:

  1. Serve warm or at room temperature. Optionally, dust with a little more powdered erythritol before serving.
