Keto Low Carb Pizza Casserole



Ingredients:

For the Casserole Base:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1/2 cup sliced mushrooms
  • 1 cup marinara sauce (sugar-free)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pepperoni slices
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions:

1. Preheat the Oven:

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.

2. Cook the Ground Beef:

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the diced onion and cook until softened, about 3-4 minutes.
  3. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.

3. Add Vegetables and Seasonings:

  1. Add the diced green bell pepper and sliced mushrooms to the skillet with the ground beef. Cook for about 5 minutes until the vegetables are tender.
  2. Stir in the marinara sauce, Italian seasoning, dried oregano, salt, and black pepper. Let the mixture simmer for about 5-7 minutes.

4. Assemble the Casserole:

  1. Spread the beef and vegetable mixture evenly into the greased baking dish.
  2. Sprinkle half of the shredded mozzarella cheese, shredded cheddar cheese, and grated Parmesan cheese over the beef mixture.
  3. Layer the pepperoni slices on top of the cheese.
  4. Sprinkle the remaining mozzarella, cheddar, and Parmesan cheese on top of the pepperoni.

5. Bake the Casserole:

  1. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the edges are golden brown.

6. Serve:

  1. Remove the casserole from the oven and let it cool for a few minutes before serving.
  2. Optionally, garnish with additional Italian seasoning or fresh basil.
